Posh Squash Recipe
Cut off and discard stem and blossom ends from squash; scrub squash but do not peel.
Cut into 1/2-inch-thick slices and cook, covered, in a small amount of boiling salted water until just tender when pierced (3 to 5 minutes), drain well and set aside.
Beat egg, then blend in mayonnaise, onion, green pepper, and thyme.
Stir in squash and add salt and pepper to taste.
