Monkfish Provencale Recipe
1. Place the flour in a shallow bowl or pie plate.
2. In a large skillet, warm the oil over high heat. Working quickly, lightly dredge each piece of fish in the flour and add to the skillet. Fry until golden brown, about 1 1/2 minutes per side. Transfer the monkfish to a platter and cover loosely with foil to keep warm.
