Chicken & Ham Soup Recipe
To make the croutons, discard the crusts from the bread and cut bread into small cubes.
Heat oil in a wok until just smoking, then fry bread cubes for 2-3 mins, or until golden.
Drain on kitchen paper and keep warm until required.
Clean and dry the wok ready to make the soup.
Add the chicken stock, sherry, soy sauces and coriander to the wok, then season with the freshly ground black pepper.
